Bottom Line- Cool and DRY!
This is where retail stores make a big mistake. Almonds are easy to store and you don’t need to refrigerate them for short term storage (days to weeks), but if you want them to retain their ideal flavor they had when they were harvested then you should store them properly. The biggest concern is humidity and moisture which create the biggest detriments to almond storage.
When properly stored almonds can last 2-3 years!
All almonds are harvested within a 45 day window in early fall. Capay Hills Orchard stores them under ideal temperature and humidity conditions so they will last for a couple years without any degradation in flavor or moisture content. We do this in a temperature and humidity controlled room at our orchard. Retail markets do not store almonds under ideal conditions as we do. They just put them in a ambient temperature storage room.
According to UC Davis research, almonds can be stored for at least 8 months at room temperature (68°F [20.0°C]), and for a year at 32° to 45°F (0° to 7.2°C), more than a year when frozen. I suggest take out of cold storage what you can in eat in 2-3 weeks, store the remainder. Store long term less than 75% relative humidity.
Here’s suggestions how to do that at home: Use zip-loc bag or glass jar and get as much air out as you can with your hands. This is easy with zip-loc, harder with jar. Humidity is the biggest problem so if you can get the air out, the better the almonds retain their flavor. Then place in refrigerator or freezer.
For smoked almonds, its not such an issue. For smoked, they can stay room temperature for 2-3 weeks, but keep them in a seal-able bag to reduce exposure to moisture. I suggest you keep cool anything beyond a 2-3 week supply. For almond butter, keep cool such as refrigerator what you can't consume in 2-3 weeks. I don’t have much experience freezing almond butter, but it seems to be ok.
Almonds that are soft and not hard and crunchy will not store as well or as long due to the increased moisture in the nut. Some people don’t like to eat hard and crunchy almonds, perhaps due to their teeth. The solution is easy. Take a quantity of almonds that you are going to consume in the next few days, put in a bag or even on a plate. Take a paper towel or cloth, get it wet then squeeze all the water out. Put the cloth in the bag (or over the almonds) of a few hour and they will be noticeably softer.
